Save the game after a career mode game. Quit, then reload the saved game to increase the physicals stats of your players.

Hint: Buying players

Note: Make sure you save your career before attempting this. When you are in the transfer market in career mode, and a player will not let you buy him, exit career mode and load it up again. Sometimes he might let you buy him this time around. Otherwise, you may have to become a better manager.
