You can lock chests and items on some servers otherwise find an anti griefing server

I'm not entirely sure you can avoid it on most servers. The best option you have is to find an online community that is asociated with a website you like or something.... i hear PCGamer has a good one. More often than not the best saftey is a "rule of understanding" by the online community. But theres always gonna eventually be that one guy that gets through the sysyem.
Personally when i played i also made sure to hide my stuff well. Pick a hill out of the way somewhere to make your home base and be sure to block it up again when inside to make it look like a regular landscape hill.

If you're an admin of the server, you can take plugins and even server commands that can disable griefer actions like flint & steel burning or block removals. If you're not the admin, you can either ask the admin for possible blacklisting system, as well as hiding your inventory/creations somewhere not easily spotted.

Protectin yourself from griefing is impossible because its on a server. The only way is to ask the admin to ban or kick them.

Server plugins are the best insurance against griefing actions. You can undo whatever they have done, and in many cases prevent griefing altogether. Stopping griefing without these plugins involves a sword, some Obsidian, and a fiendish mind.

Unless you are an OP/admin on the server, which other people have covered, the best way to avoid getting griefed is to not build near spawn or public "warps" and such, and to build underground or otherwise hide your buildings.

There's no particular way not to get griefed.
That being said, it's not a good idea to build your home out of wood.

there's no way to protect yourself, so the best way to pick good survers , find a safe place, or get the "undo" plugin

Many servers will ofer administrative support for protection or your work. Others offer your own "world" where only you and the administrators are able to place or remove blocks and the only other option is to find a server which only allows certain people to delete blocks through earning the privellidge.
