How do you reset the video output on PS3 from HDMI to AV/Component without a display?

first make sure your system is off (the main power light on the front of the ps3 must be red)

hold down the power button for about five seconds, until your hear the second beep.

and you're done. your video settings are now reset and you should be able to choose your input and configure it from there.
