trade for it, conquer a city with some, get a city with some and you need iron working upgrade to be able to get it

You will need to research Iron Working, which reveals Iron on the map. To actually get it you must build a mine on top of the resource. However you do not actually need to devote citizens to the mine in order to have it; simple a mine on the site will suffice.

Research Iron Working and then look for iron resources and build a mine.

Iron is revealed to the player once they research Iron Working. Once they have that, then they can see iron on the map. To get iron just simply build a mine on the tile. The player could also trade with other civilizations for iron.
