is it possible to unlearn a profession in world of warcraft?

yes! open your spellbook and you should see your professions. there will be a little circle with a slash mark. press the mark and a option will pop up and as you if you want to delete the profession. ( warning: once done it cant be undone so make sure thats what you wanted.)
