Is there a day count for it becoming vintage or Steam just updates the items as vintage?

It doesn't become a vintage item anymore.

Any items that were dropped before the Mann-conomy update were assigned a vintage status. Now you can only get them by trading.

Does that mean value has gone up?

Items no longer become vintage. During the Mann-Conomy update items became available for purchase for the first time. As items would be easier to acquire, all items already owned were given the 'vintage' prefix.

Vintage items are those that were earned by completing achievements prior to the Mann-conomy update. They never become vintage as far as I am aware.

Items are only vintage if you received them before the Mann. Co. Store was added. So it's impossible to accquire them now, unless you trade for one.

You can't just have an item become "vintage". The items you have became vintage because of an update Valve has done.

No, there is no day count for items to become "vintage". Vintage just means that you acquired that item before the "Mann-Conomy" update which added the Mann Co. store allowing for items to be purchased. Having a vintage item just means that you werent a tool and bought something from the store because you didnt feel like waiting  , crafting or trading for that item.
